Chocolate Cupcakes With Chocolate Mousse Filling And Chocolate Buttercream Icing

***Warning*** Those of you... I mean us :) that are on diets, please don't look at this blog post and run far, far away from your computer!

One of my blogging friends, officerswife33 from What To Expect.com recently blogged about making these yummy looking cupcakes. I cannot pass up a great cupcake recipe so I made these cupcakes last week. Here is where you can get the recipe.



Here are all the ingredients for the cupcake batter.


Prepare your pan.








Yummy chocolate! Hum, I wonder who will lick the beaters? (Oh, come on! You know you do it too!)

This recipe made 24 cupcakes and I don't have a cupcake pan that holds 24 cupcakes so I had to bake 2 sets of cupcakes.



Second batch.




The ingredients for the chocolate mousse filling.


Melt your chocolate chips.



Beat your heavy whipping cream.





Mix them both together.







This is what I used to squeeze the filling into the cupcakes.

And this is the tip I used. I used the widest one I could find.



Poke the tip into the cupcake.

Squeeze and then remove the tip.







These are the ingredients for the icing.






I wasn't crazy about the taste of the icing and also I had to make 2 batches of it so I could cover all my cupcakes. I don't know if somehow I messed up or what. So next time, I will probably just buy store bought icing.



I didn't put the snickers candy on top of the cupcakes like the recipes on http://www.kevinandamanda.com/ suggests. But I did put these petty sprinkles on top. Make sure you put the sprinkles on as soon as you icing the cupcakes because they won't stick once you wait until the icing is dried a little. You will end up with sprinkles all over your floor instead of your cupcakes!

Weight Loss Wednesday

Well, I am going to be completely honest. I haven't been dieting this past week.

*Head hung in shame*

I was doing so good and then I just gave it all up.

Enter whining... It's just so hard to not eat when there is 4 inches of snow outside and you've got nothing better to do! Oh, and then Steven took me to Ruby Tuesday and then to Starbucks Monday. So blame it on Steven.

I really want to do better. I think I've said that in every one of my weight loss Wednesday posts.

So lets get on with it...

Weight loss this week: -2 lbs.
Total weight loss: 2.2 lbs.

Loaded Baked Potato Soup And Homemade Yeast Rolls

Here is some more food pictures and recipes! Tuesday night, I fixed an old favorite of ours, loaded baked potato soup. It is so yummy and ridiculously easy! Click here for the recipe.

I'll just tell you, my favorite site for recipes is www.kraftrecipes.com. They always have the best recipes and they are so easy to make. The thing I like most about the recipes they have, is that they hardly ever use ingredients that you've never heard of.

I also made homemade yeast rolls. I'm not much of a bread person but Steven is. He loves it. SO much that he could make a meal out of just bread. Blech! I think bread is okay but not that good!

Here are my yeast rolls...


(I'm spoiled because I have a bread machine!) Add your water and egg to the bread machine pan.







Then your flour.

Am I the only one who makes such a mess with flour?



Then your sugar.




And some salt.





Now your yeast.






You are supposed to make an indention in the flour mixture to put your yeast into so that it mixes right.



Here is the dough after its all done.










Now you are supposed to shape the dough into pretty little balls. I shaped mine into pretty little messes!




Brush melted butter on top.


















Cover and let sit for 35 minutes so they can rise.









All done!
Now, on to the soup!

Okay now, here we go!





I almost always double the recipe for this soup. All you do is take 4 cups of frozen Southern style hash browns...







2 cans of cream of potato soup...

















6 cups of milk...


















Mix it all together...




















And cook. How easy is that?















Meanwhile, chop up some onions. The recipe calls for green onions but I didn't have any so I used regular ones. Green onions are a lot better though.



And here are your toppings! The recipe doesn't say to put sour cream on top of the soup but I love it on it! I think the recipe also calls for frying bacon and chopping it up for one of the toppings but I just use real bacon bits.


And there you have it! Loaded baked potato soup and homemade yeast rolls!
